🛒 Ingredients

  • 3 ribs (2kg) Beef plate short ribs
  • 2 tbsp Ground coffee
  • 2 tbsp Ancho chilli powder
  • 1 tbsp Brown sugar
  • 2 tbsp Salt
  • 5 pieces Mesquite chunks

👨‍🍳 Instructions

  1. 1Mix coffee, ancho, sugar and salt for rub. Apply to all surfaces.
  2. 2Smoke at 110°C over mesquite for 10 hours.
  3. 3Wrap in butcher paper at 74°C. Continue to 96°C.
  4. 4Rest 1 hour. Serve whole — bones will slide out.
