🛒 Ingredients

  • 2.5 kg Bone-in pork shoulder
  • 4 pieces Hickory wood chunks
  • 2 tbsp Mustard (binder)
  • 2 tbsp Salt
  • 2 tbsp Black pepper
  • 1 tbsp Paprika

👨‍🍳 Instructions

  1. 1Apply mustard as a binder all over the shoulder.
  2. 2Mix salt, pepper, paprika for dry rub. Apply liberally.
  3. 3Smoke at 107°C with hickory for 14 hours, spritzing with apple juice every hour.
  4. 4Rest 2 hours wrapped. Pull or slice and serve.
