🛒 Ingredients

  • 1 whole Beef picanha (rump cap, 1.2kg)
  • 3 tbsp Coarse sea salt

👨‍🍳 Instructions

  1. 1Score the fat cap in a crosshatch. Do NOT trim.
  2. 2Fold the picanha into a U-shape (fat on outside) and skewer through the fold.
  3. 3Season heavily with coarse salt immediately before grilling.
  4. 4Grill over charcoal rotating constantly 20–25 min. Slice thin from outside in.
