  • 6 chunks Apple+peach wood mix
  • 3 tbsp Salt
  • 2 tbsp Black pepper
  • 1 tbsp Garlic powder

👨‍🍳 Instructions

  1. 1Score the skin in a diamond pattern. Apply dry rub all over.
  2. 2Refrigerate uncovered overnight (dries the skin for crispiness).
  3. 3Smoke at 120°C over fruit wood 8 hours to internal temp 93°C.
  4. 4Blast at 230°C for 20 min to crisp the skin. Rest 30 min.
