🛒 Ingredients

  • 500 g Pumpkin
  • 2 cm Fresh ginger
  • 80 ml Coconut milk
  • 1 pc Onion
  • 600 ml Vegetable broth

👨‍🍳 Instructions

  1. 1Sauté onion in oil 3 minutes, add grated ginger and cook 1 minute.
  2. 2Add cubed pumpkin and vegetable broth, simmer 20 minutes.
  3. 3Blend everything with a hand blender until creamy.
  4. 4Add coconut milk, season with salt, pepper and nutmeg.
  5. 5Serve topped with toasted pumpkin seeds.
