🛒 Ingredients

  • 3 kg Brisket flat
  • 6 chunks Hickory wood
  • 3 tbsp Coarse salt
  • 3 tbsp Black pepper
  • 1 tbsp Garlic powder

👨‍🍳 Instructions

  1. 1Trim fat to 6mm. Apply salt, pepper and garlic powder rub.
  2. 2Smoke at 110°C over hickory for 8–10 hours.
  3. 3Wrap in foil at stall (70°C). Continue until 90°C.
  4. 4Rest 1 hour. Slice thin against the grain.
