  • 4 tbsp Salt
  • 4 tbsp Black pepper
  • 10 chunks Mesquite+oak wood

👨‍🍳 Instructions

  1. 1Trim excess fat. Apply generous 50/50 salt and pepper rub.
  2. 2Smoke at 107°C for 18–22 hours until probe reads tender throughout.
  3. 3Rest 2 hours. Pull into chunks like brisket or chop rough.
  4. 4Serve with pickles, onion and white bread — Texas roadside style.
