🛒 Ingredients

  • 1 pc Tomahawk steak (1.5kg)
  • to taste Coarse salt
  • to taste Black pepper
  • 40 g Butter
  • to taste Rosemary & garlic

👨‍🍳 Instructions

  1. 1Dry-brine overnight: season heavily with salt. Refrigerate uncovered.
  2. 2Smoke at 110°C until internal temp 48°C (about 1 hour).
  3. 3Sear directly over screaming hot coals 2 min per side for crust.
  4. 4Rest 10 min. Baste with butter, rosemary and garlic while resting.
