  • 2 tbsp Sea salt
  • 1 tbsp Black pepper
  • 1 tsp Garlic powder
  • 2 handfuls Cherry wood chips

👨‍🍳 Instructions

  1. 1Score the skin in a crosshatch pattern.
  2. 2Rub with salt, pepper and garlic powder. Refrigerate uncovered 12 hours.
  3. 3Smoke over cherry wood at 110°C for 2 hours.
  4. 4Slice thick and sear on a screaming hot grill 2 min per side.
