🛒 Ingredients

  • 2 kg Whole pork belly (skin on)
  • 4 handfuls Alder wood chips
  • 3 tbsp Coarse sea salt
  • 1 tbsp Black pepper
  • 4 pcs Bay leaves

👨‍🍳 Instructions

  1. 1Score belly skin deeply. Rub with salt and pepper. Rest overnight.
  2. 2Cold smoke with alder at 70°C for 2 hours.
  3. 3Roast at 150°C for 90 min.
  4. 4Finish on very hot grill 10 min per side until skin blisters. Rest 15 min.
