🛒 Ingredients

  • 4 kg Standing rib roast (bone-in, 4 ribs)
  • 6 chunks Cherry+oak wood mix
  • 4 tbsp Coarse salt
  • 3 tbsp Black pepper
  • 8 cloves Garlic
  • 4 sprigs Rosemary

👨‍🍳 Instructions

  1. 1Dry-brine 24 hours: rub with salt. Refrigerate uncovered.
  2. 2Apply pepper, garlic and rosemary paste before smoking.
  3. 3Smoke at 110°C to internal temp 52°C (rare). Takes about 4 hours.
  4. 4Rest 30 min. Reverse sear at 260°C for 10 min for crust. Slice between bones.
